Recipes and tips from Captain George and Captain Plank

 

We are much different than the conventional tuna you buy at the grocery store.  Most tuna is cooked before the canning process and then cooked again in the can.  The natural juices and oils (omega 3s) go right on to the floor.  Tap water and oil must be added to the can for moist fish.  At Sand Dollar Fish, we pack a fresh sushi grade albacore filet into the can and cook it only once.  Every bit of water and oil in our can comes right from the fish.  This also makes a huge difference in the quality and taste... our albacore is the best tasting canned albacore you will ever eat!

DO NOT DRAIN your tuna.  It feels weird to not drain your tuna, but trust us on this one!  The tuna will reabsorb all that good stuff and your tuna will be the perfect texture and flavor.   

 

Albacore Tuna Tacos

Prepare your favorite taco fixings: Cabbage, Tomato, Onion, Cilantro, Avocado, Salsa, Guacamole, Crema, Sour Cream etc.

Prepare your Tortilla by preference: Crispy, Soft, Corn or Flour

Open a Can of Regular, Jalapeno, or Sriracha Albacore - DO NOT DRAIN, STIR THAT OMEGA3 RICH JUICE BACK IN.

Build your Taco

 

 

Honey Mustard Tuna on whole wheat crackers

 

 

2-3 Tablespoons Honey mustard (preferred Sierra Nevada Pale ale honey)

2 Tablespoons Mayonnaise (optional)

1 Can Sand Dollar solid white albacore

Salt and Pepper to taste

Whole wheat crackers (Pepperidge Farm whole wheat or Carr's goes great)

Stir the first four ingredients together using a fork to break up the tuna and allow to reabsorb the natural juices.  Begin by adding 2 Tablespoons of mayonnaise and mustard.  Adding more until you get your desired taste and consistency.  Serve on crackers.

 

Sriracha Albacore Rice Bowls - LINDSAY/CAPT PLANK'S FAV

1/2 cup - 1 cup prepared Jasmine, Basmati, Brown, or Sushi Rice 

Quick Pickled Veggies: Cucumber, Shaved Carrot, Red Onion, Cabbage etc.  Pickling Liquid: 1C Orange Juice, 2TBS Coconut Sugar or Sweetener of Choice, 1/2tsp Sea Salt. Mix all ingredients  until sugar is dissolved, pour over veggies of choice and let sit 15-30mins.

1 Can SDF Sriracha Albacore (add amount to your preference)

2 TBS Creamy Sriracha Dressing : Juice of 1 Lime, 1/4C Mayo, 2 TBS Sweet Chili Sauce, 1 TBS Sriracha Hot Sauce, S&P to taste

Garnish: Toasted Black Sesame Seeds, Green Onion, Pickled Ginger, Cilantro

 

 

 

Southwestern mixed green salad with Jalapeno Albacore

 

This is a how you like it recipe.  Use your own taste and judgement while creating this beauty.

Mixed greens with arugula(seafood and arugula Love each other)

Our preferred toppings:

  • Sand Dollar tuna  
  • chopped red onion
  • cilantro
  • diced tomato
  • roasted corn
  • Jalepeno ranch dressing
  • crunched up tortilla chips
  • black beans
  • pickled jalapeno 
  • chopped red bell peppers

I don't break up the tuna too much for this recipe.  I try to add solid chunks to the top of the salad so guests can control their bite.  

 

 

 Jalapeno Tuna Crostini

Jalapeno Tuna Crostini 

  • Cracker or baguette slices
  • Cream Cheese
  • Jalapeno Jelly
  • Sand Dollar Jalapeno Albacore
  • Pickled Jalapeno

Toast baguette slices or arrange rackers of choice (buttery crackers work well) Shmear with cream cheese and top with a dollop of jalapeno jelly.  Remove jalapeno albacore from the can in chunks to make a good presentation on the craker or baguette slice.  Garnish with pickled jalapeno or cowboy candy(candied jalapeno) to your liking.

 

Mixed Greens with Herbs and Smoked Salmon

 

  • Mixed greens with arugula
  • juice from one tangerine or mandarin orange
  • Blackberry jalapeno jelly or plain jalapeno jelly
  • extra virgin olive oil (optional)
  • Sea salt to taste
  • Fresh chopped dill and cilantro
  • Nuts: Roasted salted pistachios, pine nuts, roasted pecans, walnuts
  • Blue cheese dressing or Gorgonzola crumbles
  • Canned smoked salmon

Dressing

  • 2 Tablespoons jalapeno jelly
  • juice from tangerine
  • 1tablespoon extra virgin olive oil
  • Sea salt to taste

Combine jelly and juice.  Whisk slowly in extra virgin olive oil. Add sea salt to taste.  Pour dressing over greens and herbs then add toppings.  When adding the salmon on top keep in chunks.

Open can with can opener.  Stab tuna with fork.Eat.Yum.Good.
